Esquite cones: black garlic aioli, Pasilla Mixe dust
Ceviche: market fish, cilantro, nori chips
Molotes: potato croquette, chorizo, requeson mousse
Asada or carnitas huaraches: Heirloom beans, choice of protein, wild greens, marinated cotija cheese
Mushroom and cheese tlacoyos : Mexican crema, queso fresco, cilantro
Salsas: creamy salsa verde, arbol chile oil, smoked chipotle
